
I love berries. I have a blueberry bush growing in the backyard, but it’s still young and the small crop is a couple of weeks off being ripe. The next best thing is getting a large punnet from Costco when they have them; they are usually reliably good, which is more than I can say for most that I have bought from vegie shops.
But this lot from NSW, for all they looked great, are flavourless and deeply disappointing. Hence they’ve been sitting in the fridge, unloved, for several days.
So in today’s episode in this baking binge, which is all about getting rid of stuff, they’re the stars, joined by some overripe bananas that are splitting.
Blueberry and banana muffins
These are destined largely for Dave’s Sunday morning bike group.
The recipe is a simple one, straight from food.com. Two differences: I added cinnamon and nutmeg, since I think a bit of spice is great with banana; and for the sugar I used a mix of raw, soft brown and dark brown.
Muffins are so rewarding – not much effort, quick, delicious.
